The method comprises the steps of: taking fresh bananas as a raw material; obtaining a banana pulp zymolyte through peeling and slicing, protecting color and blanching, beating, applying pectase and performing enzymatic liquefaction of alpha-amylase; obtaining two parts, namely a fruit juice supernatant and a fruit paste precipitate through centrifugal separation; performing vacuum concentration on the fruit juice supernatant part, then adding an additive into the concentrated fruit juice supernatant part for blending, and performing spray drying to obtain instant banana fruit juice powder; and drying the fruit paste precipitate part by adopting a free-drying method, and then crushing the dried fruit paste precipitate part to obtain banana powder rich in fiber. The method has the advantages of having a scientific and reasonable process, simple and convenient operation, low consumption of a drying additive, low drying load and energy-saving effect, allowing for obtaining two banana powder products, and improving the utilization rate of edible parts of the bananas.
