Abstract

The invention provides a soybean protein composite polymer micro-gel-based antioxidant. Soybean protein isolate with poor hydrophilicity and relative stability is combined with water-soluble polymer polyvinyl alcohol, a hydrogen bonding effect on hydroxyl, carboxyl and amino contained in the soybean protein isolate and hydroxyl contained in polyvinyl alcohol is achieved through a heat dispersion and cold shrinkage method, so that soybean protein polymer micro-gel which can be uniformly dispersed in water is formed; then the micro-gel is combined with a salicylaldehyde-cysteine schiff base metal coordination compound to obtain the soybean protein composite polymer micro-gel-based antioxidant. A research on the anti-oxidization performance proves that the composite polymer micro-gel-based antioxidant has strong ability of removing oxygen free radicals; therefore, the composite polymer micro-gel-based antioxidant can be used as super oxide dismutase (SOD) analogue, and has good application prospect in the fields of medicines, food processing and packaging materials.
