On anaerobic condition, astragalus mongholicus powder is fermented to enable astragalus mongholicus polysaccharide to be released in maximum. A fermentation process is that fermentation medium comprises astragalus mongholicus and 1% to 3% of cane sugar, the fermentation process comprises 0.2% to 0.4% of inoculum size and 30% to 40% of water, fermentation time is 5 to 7 days, and temperature is between 35 DEG C to 38 DEG C. The modern fermentation technology is utilized to ferment astragalus mongholicus, and he astragalus mongholicus polysaccharide content is 19.78% to 24.12%.
