Abstract

The invention relates to fruit and vegetable airflow puffing equipment of a material basket rotating type. By utilizing a transmission device, a material basket, a far-infrared heating device and a liquefied air cooling device, fruits and vegetables are puffed evenly and rapidly; and the substantially all flavors, colors and nutrients of the original fruits and vegetables are retained. According to the working principle, under the actions of an air compressor and a far-infrared heating tube, the pressure and the temperature of materials in a puffing tank are increased rapidly while the material basket rotates slowly, so that the materials which are turned over in the puffing tank are heated evenly; when the temperature and the pressure satisfy the process requirement, a valve connected with a vacuum storage tank is opened quickly, so that the water in the materials is vaporized under the action of internal and external pressure differences; and thus the materials are puffed and dried. Next, the materials are heated for a period of time under the vacuum condition and dried to reach the required water content; then the fruit and vegetable materials are cooled and molded by spraying a liquid cooling medium; and finally, the materials are packaged by opening the tank, i.e., a finished product is obtained. The puffing equipment provided by the invention has the advantages that the materials are evenly and rapidly heated as well as rapidly cooled, so that the process time is shortened; the energy utilization rate is improved; the product quality is improved; and the energy conservation is realized.
