Abstract

According to the method, a biological enzyme technology is mainly utilized; based on water extraction, fructus lycii is treated by a mode of utilizing a single enzymolysis method or a compound enzymolysis method; thus, bioavailability of the fructus lycii is improved, and the fructus lycii can be used for preparing fructuslycii juice and also can be prepared into fructus lycii powder. In an enzymolysis process of the biological enzymolysis method disclosed by the invention, pectinase can reduce viscosity in decomposing pectic substances in the fructus lycii, and the pectinase can simultaneously quicken impregnation and dissolution of pigment substances; finally, prepared jujube juice has the advantages of bright color and high juice yield. Cellulase can hydrolyze cellulose in the fructus lycii to generate low polymerization degree fiber and glucose, so that bioavailability is improved, and a content of sugar in fructus lycii juice is simultaneously improved. The method overcomes the defect of a single water extraction method, reduces the extraction temperature, shortens the extraction time, saves energy and improves the fructus lycii juice extraction quality; contents of soluble solid and reducing sugar in the fructus lycii juice are both increased.
