Abstract

The preparation process of the milk-containing food embedded with the nuts comprises the following steps: (1) mixing components, namely raw materials and auxiliary materials, weighed according to a proportion so as to obtain milk-containing slurry, wherein the water content of the milk-containing slurry is 25-35%; (2) performing jetting-casting on the milk-containing slurry by adopting a jetting-casting technology so as to have the milk-containing slurry molded, thereby obtain molded slurry; (3) embedding the bottom part, the middle part or the upper part of the molded slurry with nut particles, wherein the embedding quantity of the nut particles accounts for 1-20% of the quantity of the milk-containing food; and (4) performing vacuum drying on the molded slurry embedded with the nut particles so as to obtain a finished product. The milk-containing food prepared by the preparation process provided by the invention is high in milk solid content; and moreover, the milk-containing food is embedded with nuts, so that the milk-containing food is richer in nutrients. Thus, the milk-containing food embedded with the nuts can be taken as a dairy product capable of supplementing milk nutrients.
