Abstract

The invention discloses a multi-strain compound fermentation method of fresh and tender corn stigma, which comprises the following steps: (1) pretreatment: rinsing and drying the fresh and tender corn stigma, crushing, sieving with a 60-mesh sieve, carrying out reflux extraction on corn stigma powder for 2 hours at 90 DEG C, cooling an extracting solution, filtering, centrifuging for 10 minutes at 4000 r, taking supernate, carrying out suction filtration on the supernate, carrying out high-temperature and high-pressure sterilization on filtrate for 15 minutes at 121 DEG C, and then cooling a sterile solution to room temperature; (2) fermentation: inoculating lactobacillus paracasei and saccharomyces cerevisiae in a logarithmic phase into the sterile liquid obtained in the step (1) for compound fermentation, wherein the inoculum size of a compound strain is 8%; and (3) storage: placing the fermentation liquor at 4 DEG C for after-ripening for 12 hours, and centrifuging to take supernate.
