Problems solved by technology

Although the use of enzymatic methods to extract gelatin can avoid some disadvantages caused by traditional methods, most of them use a single enzyme preparation, or add the same or different enzyme preparations at different stages, and process them one by one in batches. The enzyme and substrate are mixed, and after the reaction is complete, the enzyme is separated from the product, but it is difficult to maintain its activity without loss during recovery
In fact, in each separation reaction process, a part of the enzyme is wasted, and it is easy to bring some residual enzyme into the gelatin post-treatment process, seriously affecting the quality of the gelatin product
In addition, due to the specific activity of the enzyme, the process conditions are difficult to control, and it is basically only in the experimental stage, which affects the large-scale application and promotion of enzymatic glue production in industry. There is a lack of special gelatin extraction enzyme treatment agent for skin (bone) collagen

Abstract

The invention relates to a micro-spherical fossilized complex enzyme and a process for preparing edible gelatine by enzymolysis of leather, wherein the micro-spherical fossilized complex enzyme is prepared from the following constituents according to parts by weight through absorption, cross linking and embedding: 2-8 parts of complex enzyme, 70-90 parts of fossilizing carrier, 0.5-1.5 parts of cross linking agent, 10-18 parts of embedding agent, and 0.5-1.5 parts of pH buffer agent. The process comprises the steps of enzymolysis, filtration and separation and gelatine dissolution, wherein thespecific steps are as follows: placing leather pieces cut after pre-treatment into an enzymolysis wooden rotating drum and rotating the drum by using water that has the volume of 0.5-1.5 times that of the drum; then adding the micro-spherical fossilized complex enzyme to the drum for enzyme bath at the temperature of 30 to 42 DEG C till the smooth belt of the leather pieces becomes transparent; then separating the primer, filtering and separating the enzyme solution for reuse and washing the primer in the water; and then continuing with the normal operations. The fossilizing enzyme is not soluble in the water, therefore, the fossilizing enzyme is easy to be recycled and can be repeatedly used; and the actual cycle for production of a ton of gelatine is shortened by 90%, the water consumption is reduced by 87.5-90%, the cost is lowered by 28-36%, the yield is increased by 10-20%, and the gelatine strength is increased by 20-30%.

Description

technical field [0001] The invention relates to a biological enzymatic hydrolysis method capable of enzymolyzing collagen molecules, belonging to the application field of biological enzyme technology, in particular to a microsphere-shaped immobilized compound enzyme and a process for preparing edible gelatin by enzymatically hydrolyzing leather. Background technique [0002] In the traditional preparation method, the preparation of gelatin from leather mostly adopts the ash method and alkaline production process, which mainly includes soaking the chopped and degreased skin pieces for a long time in lime milk, and then neutralizing and washing them for many times. The production cycle is as long as 20-60 days, and the water consumption is large. It takes 800-1000 tons of water to produce one ton of gelatin. The production cost is high, which often makes the performance of each batch of products unstable, and the product grade is boiled with time. The temperature of the glue c...
