The auricularia nigricans yoghourt is mainly prepared from the following raw materials in parts by weight: 2-8 parts of fresh milk, 1-2 parts of auricularia nigricans, 1-6 parts of water, 0.2-1.0 part of a sweetness adjusting agent, and 0.04-0.5 part of a compositefermenting agent. The preparation method of the auricularia nigricans yoghourt comprises the following steps of freezing the auricularia nigricans, performing microwave unfreezing, performing superfine crushing treatment, adding water to obtained powder, and performing superhigh pressure treatment so as to obtain auricularia nigricans slurry; and adding fresh milk according to the formula, performing preheating, adding the sweetness adjusting agent, performing homogenizing treatment, performing ultrasonic treatment, performing sterilization, adding the composite fermenting agent for fermentation, and performing refrigeration so as to obtain the auricularia nigricans yoghourt.
