Abstract

The invention discloses a preparation method of a jujube residue insoluble dietary fiber powder. The method comprises the following steps: 1) adding jujube residue into water of 2-5 times the weight of the jujube residue, mixing for pulping, grinding, and adding 80-120 g of cellulase, 80-120 g of protease and 80-120 g of amylase in per ton of the jujube residue slurry for enzymolysis; 2) centrifuging the jujube residue slurry treated with enzymolysis to obtain an insoluble solid, carrying out a bleaching treatment on the insoluble solid by adding hydrogen peroxide, centrifuging, compressing, filtering and drying; and 3) extruding and pulverizing the dried insoluble solid to obtain the jujube residue insoluble dietary fiber powder. The preparation method uses cellulase, protease and amylase to carry out compound enzymatic treatment, and effectively decomposes impurities; the enzymolysis conditions are mild, and cause no pollution to the environment; besides, the extrusion is employed to improve functions such as water absorption and expansion of the jujube dietary fiber.
