Abstract

The invention discloses a method for preparing snack food by utilizing isolated soy protein. The method comprises the following steps: mixing isolated soy protein with water, agitating uniformly, then adding papain and egg white, agitating uniformly, adding soybean oil, agitating uniformly, adding corn starch, monosodium glutamate and refined salt, and agitating until the serous fluid is fine and smooth and has no bubble so as to obtain mixed serous fluid; pouring the mixed serous fluid into a tray while controlling the thickness of the mixed serous fluid in the tray to be 2.5-3.5cm, sealing with a preservative film, and standing for 8-12 hours at 3-5 DEG C so as to obtain a cooked formed product; dicing the cooked mixed formed product, and stewing for 25-35min in water with the temperature being 80-85 DEG C so as to obtain a stewed product; slicing the stewed product into slices with thickness of 2mm, pre-freezing for 3 hours at temperature of minus 20 DEG C and carrying out vacuum freeze drying, thus obtaining the finished product. The snake food prepared by the method is light yellow in appearance color, fluffy in texture and crisp in taste. The product is high in content of protein, thus being an excellent protein supplementary food.
