Abstract

The invention belongs to the technical field of food processing, and discloses a high-dispersion phytosterol ester microcapsule, as well as a preparation method and application thereof. The preparation method comprises the following steps: firstly, dispersing lactose and soy isolate protein in water, sufficiently hydrating to obtain a wall material solution; secondly, dissolving phytosterol ester in an oil phase to form a core material solution; thirdly, mixing the core material with the wall material; and finally, homogenizing the mixed liquid, performing micro-fluidization to form micro-emulsion having fine particles, and drying by spray to coat the composite wall material of the soy isolate protein and lactose with the oil phase and the phytosterol ester so as to obtain the high-dispersion phytosterol ester microcapsule. The preparation method is simple and can be used in continuous production, and the microcapsule has good water solubility and can be applied to processing preparation of foods, health-care products and medicines as an ingredient.

Description

technical field [0001] The invention belongs to the technical field of food processing, and in particular relates to a highly dispersible phytosterol ester microcapsule and a preparation method and application thereof. Background technique [0002] Phytosterols are analogues of sterols and are listed as functional oils. They are off-white powders at room temperature, odorless and tasteless, and have a melting point of 130-140°C. Phytosterols in nature have dissociation and esterification properties. Studies have shown that phytosterols play an important role in inhibiting tumors, preventing heart disease, anti-cancer, preventing and treating prostate diseases, and regulating immune function. The most eye-catching is the cholesterol-lowering effect. In September 2000, the U.S. FDA has approved the food added with phytosterol and the food with phytosterol ester to use the label of "good for health", and phytosterol can be used safely in food. Phytosterol esters mainly exist i...
