The invention discloses a method for extracting buckwheat protein from buckwheat. The method comprises the following steps: adding taken buckwheat powder to an extract solution, stirring and extracting the buckwheat powder, ending extraction and separating the buckwheat powder to obtain a buckwheat protein extract solution; adding a precipitant while stirring the buckwheat protein extract liquid, precipitating completely and collecting a sediment; adding water to the sediment to obtain a protein solution; adding an ionic liquid to the protein solution, stirring, standing, dividing the liquid into two phases, and separating out an ionic liquid phase; adding purified water to the ionic liquid phase, stirring, standing, dividing the liquid into two phases, and separating out a water phase; and drying the water phase, and removing moisture, so as to prepare the buckwheat protein. The method for extracting the buckwheat protein from the buckwheat disclosed by the invention has the advantages of being high in extraction rate, high in extraction speed and simple to operate; pollution to the environment and hidden dangers in safety production due to use of strong acid and alkali are avoided; and the precipitant is a purely natural or food-grade material, and is safe, nontoxic, environmentally friendly, and good in enrichment effect on protein.
