The preparation process comprises: removing pedicles, rinsing strawberries and performing color protection treatment; puttingthe strawberries subjected to color protection treatment into rock candy water with the mass concentration of 10%, enabling the rock candy water to be above the strawberries and pickling same for 2.5-3.5 hours; rapidly feeding the pickled strawberries into a tunnel-type instant freezer and controlling the air blowing temperature in the instant freezer to be lower than -35 degrees so as to enablethe central temperature of the shaped strawberries to rapidly drop below -15 degrees, wherein the quick-freezing time is 10-20 minutes; and finally, feeding the strawberries shaped through quick-freezing into a packaging machine for packaging, and then feeding same into a low-temperature warehouse with the temperature lower than -18 degrees for storage after inspection.
