The alkali-soluble acid precipitation method or the ammonium sulfate precipitation method utilized in the method is capable of obviously improving extraction rates of the edible fungi proteins; and the time of the enzymatic hydrolysis is controlled so as to effectively control degradation degrees of the proteins.
