zinc chelate
peptide derived from
Litopenaeus vannamei, its preparation method, and its application, belonging to the field of polypeptide
biotechnology. The process includes: taking
Litopenaeus vannamei meat pulp, enzymatically hydrolyzing it with a
neutral protease, chelating the
hydrolysate with a
zinc source, separating and purifying it by gel
chromatography, and collecting the highly chelating
active component; identifying the highly chelating
active component by LC-MS / MS, using water
solubility, non-
toxicity, low allergenicity, and high
zinc chelation potential as screening criteria, and calculating the
peptide and Zn content using molecular docking. 2+ By determining the
binding energy, highly active zinc chelating peptides were obtained through screening. Five high-binding-energy peptides were identified, three of which can stably chelate zinc: TGPDPDPTEFL, GEIPDSDLPDRRG, and AFDGDGDRNM. The zinc chelating peptides obtained in this invention exhibit high
