The method comprises the following steps: pulping and grinding oyster meat, carrying out enzymolysis on the oyster meat by using flavor protease, and chelating the product of enzymolysis and Zn<2+> compound under a certain condition to obtain the oyster protein peptide and zinc chelate. The oyster protein peptide and zinc chelate can be used as zinc supplementing agent and gradually dissolved under the intestinal weak-alkalinity condition to gradually release Zn<2+>ions so that the absorption and utilization rates of the Zn<2+>ions are effectively improved. The preparation method comprises enzymolysis, chelation and drying. The preparation process disclosed by the invention is simple; the raw materials are low in cost and easy to obtain; the drying is performed by adopting a spray drying method, so that the production period is greatly shortened, and the time cost and the production cost are reduced; and the defatted soybean protein small peptide zinc chelate is suitable for large-scale production.
