The preparation method comprises the following steps: carrying out aqueous enzymatic method extraction on rhizome nelumbinis by compound enzyme of cellulase and pectinase to obtain a primary extractive; carrying out membrane separation on the primary extractive to obtain the rhizome nelumbinis polyphenol extractive. Rhizome nelumbinis polyphenol adopted by the rhizome nelumbinis polyphenol extractive belongs to a diet source and is taken as the substrate of polyphenol oxidase, enzymatic reaction can be regulated and controlled, an effect on inhibiting the browning of fruits and vegetables is obvious, and the rhizome nelumbinis polyphenol extractive is a good natural fruit and vegetable preservative and antioxidant.
