Abstract

The method comprises the following steps: pretreatment, enzymolysis, extracting, decoloring, alcohol precipitation and drying, thereby obtaining solid pectin. According to the pectin extraction method provided by the invention, the disadvantage of traditional processes in which acid solvents are extensively used is overcome, and the obtained pectin product is high in purity, little in molecular structure damage and free of solvent residues; and the sweet potato pectin extracted by the method has the galacturonic acid content of 75% to 85% (w / w), the viscosity of 30mPa.S to 32mPa.S, the degree of esterification of 75% or more and the degree of gelation of 150% to 160%, and various indicators of the sweet potato pectin are all obviously superior to those of pectin extracted by the traditional acid methods and are close to those of apple pectin, so that the method is more applicable to food industry application.
