Abstract

The invention discloses a mulberry variety screening and fruit quality improving method. According to a research system, chemical components and mineral elements of 13 mulberry varieties are analyzed, data are processed by using partial least squares, a main component analysis method and a typical relation analysis method, results show that vitamin C and titratable acid in mulberry may be key components which affect active components of the fruits, mineral elements such as zinc and copper also play corresponding roles, rutin, anthocyanin, vitamin C and titratable acid in the fruits are in remarkable positive correlation, the content of the titratable acid is one of significant factors which determine the flavor of the mulberry, and the titratable acid plays a significant role in stabilizing the anthocyanin, the vitamin C and the rutin. Calcium, magnesium, potassium and selenium in the mineral elements are in remarkable positive relation, and another positive relation group includes copper, iron and zinc. The research results show that reference bases and referential research means are provided for mulberry variety screening and fruit quality improvement.
