Abstract

The invention relates to a nuclear magnetic resonance hydrogen spectrum method for identifying whey protein powder added into formula powder. The method comprises the steps of weighing formula powderto be identified, dissolving with ultrapure water, adding a proper amount of trichloromethane, carrying out vortex centrifugation, measuring a small amount of the treated upper-layer sample, adding the small amount of the treated upper-layer sample into a heavy water solution containing 2,2,3,3-tetradeuterated trimethylsilane acrylic acid and sodium azide, uniformly mixing, and analyzing by usinga liquid nuclear magnetic resonance spectrometer. The nuclear magnetic resonance hydrogen spectrum fingerprint of the sample has the following characteristics: if a raised envelope peak exists withinthe displacement of 0.80-1.0ppm to be connected with zigzag multiple peaks, a cluster of multiple peaks exist within the displacement of 1.37-1.43ppm, and a peak exists within the displacement of 3.011-3.025ppm, it is proved that whey protein powder is added into the identified formula powder. The method provided by the invention is simple and efficient, and can accurately identify whey protein powder in formula powder such as bovine colostrum powder, formula milk powder and compound protein powder.

Description

technical field [0001] The invention belongs to the technical field of health food detection, and in particular relates to a method for identifying whey protein powder added in formula powder by using hydrogen nuclear magnetic resonance spectrum fingerprints. Background technique [0002] Whey protein is a protein extracted from milk, accounting for 20% of the total milk protein, mainly including β-lactoglobulin, α-lactalbumin, serum albumin and immunoglobulin. Whey protein has the advantages of high nutritional value, easy digestion and absorption, and rich in various biologically active ingredients. It plays an important role in the metabolic balance, immunity, and disease prevention of the human body. It is an important raw material of health food such as formula powder and sports nutrition supplement. However, some unscrupulous manufacturers do not add whey protein in the actual production of formula powder or add whey protein to some formula powder raw materials such a...
