The method comprises the following steps: selecting dry sea cucumber as raw materials, crushing and adding n-hexane or ligarine for extraction and degreasing processing; removing an organic solvent from degreased sea cucumber powder, and adding ethanol for extraction to remove saponin; drying and placing in an enzymolysis tank, adding water, adding animal protein hydrolytic enzyme and trypsin for one-time enzymolysis after full swelling, and performing enzyme deactivation; performing centrifugation on obtained sea cucumber enzymatic hydrolysate, placing an ultrafiltration liquid obtained through ultrafiltration in the enzymolysis tank, adding flavor proteolytic enzyme for enzymolysis processing, and performing enzyme deactivation; adjusting the pH value, cooling at lower temperature, standing, performing centrifugation and ultrafiltration, collecting an interception liquid, and drying to obtain the dry product of the sea cucumber polysaccharide.
