Abstract

The method comprises the following steps of preparing a cane molasses solution from the cane molasses, regulating a pH value to 4-6, adding a complex enzyme agent, and keeping the temperature at 40-55 DEG C for 1-1.5 hours; heating to 60-65 DEG C, adding sucrase, and keeping the temperature for 2-3 hours; raising the temperature to 85-95 DEG C and keeping the temperature for 10-15 minutes to obtain a pretreated cane molasses solution;adding chitosan and sodium carboxymethylcellulose into the pretreated cane molasses solution, stirring for 30-40 minutes, and centrifugally collecting supernate; and adding amino acid into the supernate, heating to 140-150 DEG C, keeping the temperature to react for 1-2 hours, cooling to obtain a reaction product, concentrating and drying to obtain the caramel pigment.
