Abstract

The present invention discloses a wheat storage protein soluble waterborne solvent compound and application. The waterborne solvent compound comprises 5-25wt percent of alkaline metal hydroxide, 1-5wt percent of sulfur-containing compounds, and water. The waterborne solvent compound can be used to dissolve wheat storage protein and to prepare wheat protein fiber. The present invention has the beneficial effects below.
