Abstract

The present invention discloses a wheat storage protein soluble waterborne solvent compound and application. The waterborne solvent compound comprises 5-25wt percent of alkaline metal hydroxide, 1-5wt percent of sulfur-containing compounds, and water. The waterborne solvent compound can be used to dissolve wheat storage protein and to prepare wheat protein fiber. The present invention has the beneficial effects below. Firstly, the waterborne solvent compound provided by the present invention has strong dissolving capacity and can dissolve industrial gluten flour including starch impurities completely under normal temperature; secondly, the waterborne solvent compound provided by the present invention causes no degradation of wheat storage protein and has a long period of solution storage; thirdly, the wheat protein fiber provided by the present invention has a short production cycle and the production technique is simple, being favorable for industrialized production.
