The enzymolysis time for extracting astaxanthin by adopting the existing enzymolysis method is generally more than 15 hours, and the whole extraction process only needs 3-6 hours by adopting the method through assisting the extraction of the organic solvent while grinding in the enzymolysis process, so that the time can be shortened by 57-78%, and the time cost can be greatly saved. The method comprises the steps of carrying out enzymolysis by adopting pectinase, wherein the enzymolysis pH value is 4.0-6.0; firstly drying the enzymolysis liquid, and then extracting with ethyl acetate.
