A ready to bake refrigerated batter containing one or more food grade edible hydrocolloids and having a high yield stress value at refrigeration temperature (>1500 Pa@ 4.5° C.). The batter bakes into products with specific volumes, textures, and overall product quality typical of bakery products made from conventional low yield stress batters. With a high yield stress value, the batter is stiff and sliceable; therefore, it can be formed into shapes convenient for the end user to bake. The stiff, sliceable batter can be used to make muffins, muffin tops, cakes, cupcakes, drop biscuits, scones, pancakes, cinnamon buns, donuts, waffles, brownies, and other bakery products made from batters. The batter can be pumped, extruded, or molded and subsequently sliced, scored, wire cut, stamped, or rolled into many different formats due to the fact that it retains its shape at refrigerated temperatures. Examples of such formats are: individual pieces of any shape (round pucks, hexagon pucks, cubes, etc.) cylinder shaped logs that can be sliced into individual pieces scored or unscored rectangular blocks that can be broken or cut into individual pieces flat sheets The refrigerated pieces can be placed directly onto a baking pan, muffin pan, aluminum muffin cup, cake pan, etc. and immediately baked in the oven to yield a product with a high specific volume. The batters of this application can be made to be stable for more than 75 days at refrigeration temperatures using conventional unmodified atmospheric packaging such as plastic films or plastic pails. Preferably, the packaging material have good moisture and oxygen barrier properties. The invention batter can also be stored frozen.

The invention relates to packaging for food products, particularly for baked goods such as muffins, cookies, pastries, cupcakes, breads or the like, wherein a container comprises a base or article-receiving portion, and a lid portion that is hinged to the base or article-receiving portion. Both portions have side flanges, wherein the flanges are selectively connected to one another by a fastener system to close the article-receiving portion with the lid portion. The article-receiving portion is formed to conform to and house a single-serving baked food product. The base portion may also have at least one stability member extending therefrom to provide stability of the base portion on a surface. A package of a plurality of containers may be provided, with each individual container being selectively detachable from the package. In an example, the individual containers may be attached to one another by micro perforations, such that upon detachment of an individual container, the connecting portion is smooth and does not have any sharp edges or protrusions which could harm a consumer.

Production method of cupcakes

The invention discloses a production method of cupcakes. The method includes: firstly, dividing 4-6 eggs into egg white and egg yolk which are then respectively placed into two small stainless barrels, and sequentially placing 20-30g of white granulated sugar, 40-60g of milk, 40-60g of salad oil, 20-30g of milk powder and 60-90g of low-protein flour in the small barrel containing the egg yolk prior to stirring evenly and sufficiently; placing 40-55g of white granulated sugar in the small barrel containing the egg white and stirring for 120-150 seconds with an eggbeater; secondly, stirring the well stirred egg yolk and egg white evenly and sufficiently to have cake liquid produced; putting the cake liquid evenly into 10-16 high temperature resistant paper cups, picking up the paper cups 5-10cm away from the desktop and then laying down for 5-6 times in a continuous manner; finally, allowing a oven to be preheated at the temperature of 170 DEG C for 3-4 minutes, placing the cups on the middle layer for 22-25 minutes, taking out the cups and having the same stood upside down till the cakes are entirely cooled. The method is simple in production, and the cupcakes are soft in taste and convenient to carry out.

A holding assembly for aesthetically displaying comestibles comprises a retaining structure and a positioning member. The retaining structure allows the user to firmly secure a comestible to the holding assembly. The retaining structure has two different embodiments: one embodiment for softer comestibles with a flat bottom, such as a cupcake, and another embodiment for more rigid comestibles with a round exterior, such as fruit. The first embodiment of the retaining structure is a platform with tines, and the second embodiment of the retaining structure is a hollow hemisphere with one tine. The positioning member is a long shaft that allows the user to position the comestible in a desired location. The top end of the positioning member is used to attached to the bottom of the retaining structure, and the bottom end of the positioning member is used to penetrate into a base in order to situate the holding assembly.
