The method comprises the following steps: (1) preparing the solid condensed tannin into an aqueous solution, and performing degradation of the condensed tannin in a mode of adoption of hydroxyl radicals assisted by ultrasound; (2) taking one degradation sample solution at intervals in the degradation process, performing a reaction on the tannin inthe degradation sample solution with formaldehyde so as to form a solid product, determining the increased amount of the solid product, and stopping degradation until no increase of the solid productso as to obtain an aqueous solution of condensed tannin oligomer; and (3) evaporating water from the aqueous solution of condensed tannin oligomer, and performing vacuum freeze drying so as to obtainthe tannin polyphenol oligomer powder.
