The invention discloses an on-line detection device and an on-line detection method for the moisture content of a cereal from a combine harvester. The on-line detection device comprises a sampling box, a servo motor, a sensor, a single chip microcomputer and the like, wherein an upper thin plate and a lower plate of the sampling box can be opened or closed; the sensor is located inside the sampling box. When the on-line detection device works, the single chip microcomputer controls the servo motor to rotate, so that the upper thin plate is opened and the lower thin plate is closed, takes out a fixed volume of the cereal from a grain outlet by utilizing the sampling box, and then controls the servo motor to rotate, so that the upper thin plate is closed; the single chip microcomputer receives information from the sensor and carries out data processing to obtain the moisture content. After the measurement is completed, the servo motor is controlled to rotate, so that the lower thin plate is opened and the cereal freely falls into a grain box. Subsequently, the control is repeated to open the upper thin plate and close the lower thin plate, so as to carry out sampling detection of a next time; the on-line real-time detection is realized. A multi-information fusion technique is adopted by the on-line detection device and the on-line detection method; the influences of an ambient temperature and the density of a cereal pile in a detection process are eliminated; the detection reliability of the moisture content is improved.
