Abstract

The invention discloses a yeast product with antioxidation and selenium-supplementing functions and a preparation method thereof. The preparation method comprises the following steps: (1) adding sodium selenite to saccharomyces serevisiae in a logarithmic growth phase and/or the growth stationary phase, obtaining bacterial liquid after the fermentation, and centrifuging and drying obtained thalli;(2) carrying out inactivation on the obtained thalli to ensure that endoenzyme of the saccharomyces serevisiae keeps active while the saccharomyces serevisiae is dead; (3) adding neutral protease, papain and NaCl into inactivated thalli, carrying out enzymolysis autolysis under an anaerobic condition; (4) collecting the autolysis solution obtained in step (3) for centrifugation, and carrying outfreeze-drying on the obtained precipitate, thereby obtaining a yeast product. The yeast product produced by the preparation method provided by the invention has high selenium content, simultaneously possesses the antioxidation property, and helps animals to digest and absorb organic selenium, and is a yeast product which has the antioxidation and selenium supplementing functions.
