This invention provides a method for removing astringency from
black chokeberry, comprising the following steps: subjecting fresh
black chokeberry fruit to a stepped heating treatment to obtain astringency-removed
black chokeberry fruit; wherein the stepped heating treatment involves at least two heating increases, and the final temperature of the stepped heating treatment is 50℃~60℃. Compared with the prior art, this invention uses segmented low-temperature variable-temperature
drying, rather than constant-temperature
drying, avoiding the problems of
moisture retention in the constant-temperature
drying chamber, severe fruit
moisture loss, and severe deformation; and partially evaporates the internal
moisture of the fresh fruit, preventing rapid shrinkage and deformation, while accelerating the
ripening process of the fresh fruit, effectively reducing the
tannin content in the fruit, reducing astringency, and to a certain extent solving the bitterness of black chokeberry fruit, providing more possibilities for further
processing of black chokeberry fruit.
