The present invention discloses a method for extracting yellow pigment from Malus toringoides. The method comprises: 1, drying juiced Malus toringoides fiber residue; 2, cooling the dried fiber residue to a room temperature, and repeatedly crushing until completely screening; 3, mixing the crushed fiber residue, ethanol and a chloroform solution, repeatedly leaching and filtering, and separating to obtain a supernatant; 4, adjusting the PH value of the supernatant to 4-5 with KOH, and adsorbing the effective component phlorizin in the solution by using an adsorption resin; 5, carrying out elution with ethanol, concentrating, and drying to obtain phlorizin; 6, adding the phlorizin, glucosidase and polyphenol oxidase to an acetic acid-sodium acetate buffer solution, introducing oxygen, stirring, carrying out an enzyme catalysis conversion reaction, heating to inactivate the enzyme after completing the reaction, extracting with ethanol, concentrating the lower layer aqueous phase, and drying; 7, dissolving the dried crude product in methanol, removing the buffer salt, concentrating the supernatant, and drying to obtain the yellow pigment fine produt.
