The application of the Aspergillus flavus strain in extracting zephyranthesin from plant materials involves using the strain to ferment and break down the cell walls of plant materials containing zephyranthesin. A method for extracting zephyranthesin from Dioscorea bulbifera includes the following steps: pulverizing Dioscorea bulbifera and mixing it with water; inoculating the mixture with the Aspergillus flavus strain for fermentation and cell wall breaking to obtain broken-wall Dioscorea bulbifera; soaking the broken-wall Dioscorea bulbifera in an alkaline aqueous solution, filtering and washing with water until neutral, and then drying for later use; and extracting the material treated in step S3 with an extractant to obtain a zephyranthesin extract. The Aspergillus flavus strain increases the zephyranthesin extraction rate by 2.48 times compared to before cell wall breaking, reduces the amount of organic solvent used, lowers energy consumption, is environmentally friendly, and has low industrialization costs.
