aspergillus oryzae, efficient synergistic degradation of
protein and
carbohydrate can be achieved, generation of
amino acid nitrogen,
flavor amino acid, Kokumi active
peptide and
aroma substances is promoted, and the
flavor, the strong
flavor intensity and the
aroma expression of the soy sauce are remarkably improved. The method is stable in process, is suitable for optimization of a high-salt liquid-state soy sauce fermentation process, and has a good industrial application prospect.
