The application provides a
fermentation mechanism with multi-layer tray fixation, relates to the
fermentation technical field, and comprises a hydraulic damping and oil path locking
system formed by the cooperation of a groove, a
piston block and a push spring; and a linkage mechanism which converts
linear motion of a tray into a hydraulic drive
signal by the cooperation of a fixing frame, the tray, a moving wheel, a fixing wheel, a belt, a rotating shaft, an intermediate sleeve, an extension rod, an extension sleeve, a double
pulley and a tension spring. The mechanism automatically limits the speed by the flow damping of hydraulic oil when the tray is pulled out, and the oil path is locked by the cooperation of the elastic sheet and the groove and the blocking of the intermediate groove by the sealing sleeve when fixation is needed, so that the dough displacement or falling caused by too fast pulling out of the tray is effectively avoided, and the stability and safety of the
fermentation operation are significantly improved.
