anesthetic effect of CO2 saturated
ice water mixture with low temperature
dormancy, so that the fish body enters the
bloodletting procedure in a non-struggling and non-stress state, CO2 is dissolved in water to form
carbonic acid which enters the blood through the
gill to reduce the pH value, not only the
anesthetic effect is soft, but also the bloodletting is assisted, the stress meat quality deterioration problem caused by traditional stunning is solved, and the thoroughness of bloodletting is ensured to lay a foundation for subsequent high-quality fish meat.
