The invention provides a
chlorine-free bleaching and stabilizing treatment method for
vinasse fibers, and belongs to the technical field of
food processing. The
vinasse fibers can be bleached through four stages of
enzyme delignification,
malic acid-
hydrogen peroxide bleaching, secondary
peroxide refining and biological
coating stabilization, the dietary fibers with high whiteness, complete structure and stable functions are obtained, the surfaces of the obtained dietary fibers are coated with
chitosan, the whiteness is larger than or equal to 85%, the
crystallinity index is larger than or equal to 0.65, the water-holding capacity is larger than or equal to 40 g <-1 >, and the water-holding capacity is larger than or equal to 10 g <-1 >. The
phenolic antioxidant with the content of not less than 75-85% can be retained, the
antioxidant activity (
DPPH) with the content of not less than 68% is shown, and
delta E30lt is obtained after 30 days of storage; and 1.0. According to the method disclosed by the invention, a
chlorine-containing oxidant is not used, the whole process is operated under a mild food-grade condition (the temperature is less than or equal to 85 DEG C and the pH is less than or equal to 10.5), the dietary fibers can be recycled from byproducts of a brewery, the generated
wastewater is biodegradable, and the method is safe, green and environment-friendly.
