food processing, and discloses low-GI radix puerariae whole flour noodles and a preparation process thereof, and the low-GI radix puerariae whole flour noodles are prepared from the following raw materials in parts by weight: 76-84 parts of
wheat flour, 6-14 parts of radix puerariae whole flour, 10 parts of auxiliary material
powder, 0-10 parts of vital
gluten, 0.1-0.4 part of konjac
powder and 1 part of table salt. The auxiliary material
powder is composed of buckwheat powder and
red bean powder, and the weight ratio of the buckwheat powder to the
red bean powder is 9: 1. The content of
glucomannan in the konjac powder is more than or equal to 80%. By adopting the
raw material formula consisting of the
