The β-carotene was dissolved in n-isobutyl acetate and the hot solvent phase was dispersed in a modified water starch solution. The isobutyl acetate was then evaporated. The solvent traces were removed by water vapor distillation at low pressure. The dispersion as then dried. The β-carotene thus obtained is used as colorant, particularly in the food industry.
