The invention discloses a method for efficiently extracting
polyphenol substances in olive juice by recycling PVPP (
Polyvinyl Pyrrolidone). The method comprises the following steps: 1) adding water into the pulp of fresh olive fruits, pulping, and adding
pectinase and
cellulase for enzymolysis; (2) squeezing the olive pulp subjected to enzymolysis to obtain juice, filtering, centrifuging, and collecting crude
olive extract supernate; (3) adding the crude
olive extract supernatant into the swollen PVPP until the final concentration of the PVPP is 5%, stirring, adsorbing, standing, centrifuging, and discarding the supernatant to obtain PVPP precipitate adsorbed with olive
polyphenol; 4) carrying out
desorption on the PVPP precipitate adsorbed with the
oleuropein by using an
elution solvent, and separating used PVPP and a
desorption solution containing the
oleuropein; according to the method, the PVPP is recycled to extract the polyphenols, the
polyphenol substances are obtained through
desorption, adsorption and purification, clarified
fruit juice is obtained at the same time, and
waste recycling is achieved.
