The invention relates to a zymolysis method for extracting an oligopeptide mixture with high F value by Rana temporaria eggs. The method has the steps as follows: (1) after are compressing dried Rana temporaria eggs, and egg oil is filtered to obtain egg residue for standby; (2) the egg residue is placed in a reaction kettle and purified water is added, stirred and heated to 48 DEG C to 52 DEG C; and then after pH value is regulated to 8.0 to 8.5, peptide compound enzyme with the weight to be 1 percent to 3 percent of that of the egg residue is added for hydrolysis for 4h to 6h; the temperature is heated up to 80 DEG C to 85 DEG C, and insulated for 10min to 20min; and filtering is carried out to obtain filtrate which is frozen, dried and shattered to obtain the oligopeptide mixture with high F value. Or step (2) can be as follows: pH value is regulated to 1.5 to 2.5, pepsin with the weight to be 1 percent to 3 percent of the egg residue is added for hydrolysis for 4h to 6h; and after the pH value is regulated to 6 to 7, actin enzyme with the weight to be 0.5 percent to 1.5 percent of that of the egg residue is added for hydrolysis for 5h to 7h; and then the temperature is raised to 85 DEG C to 95 DEG C till finally the oligopeptide mixture with high F value is obtained. The method is characterized by reasonable technique, high yield and recyclable egg residue waste.
