The invention discloses a pulsed electric field treatment preparation method of gingerol with high content of 6-gingerol. The method mainly comprises the following steps: (1) cleaning fresh yellow ginger, slicing, drying ginger slices, crushing by a crusher, and sieving to obtain dried ginger powder; (2) adding dried ginger powder into ethanol, uniformly stirring, and adding tartaric acid to adjust the pH value to obtain a dispersion liquid; (3) pumping the ginger powder dispersion liquid into a pulsed electric field treatment chamber for pulsed electric field treatment; (4) carrying out three-phase separation on the treated ginger powder dispersion liquid to obtain supernatant, removing impurities by passing through a membrane to obtain clarified filtrate, and carrying out vacuum decompression concentration on the filtrate until no ethanol is screwed out, thereby obtaining the gingerol concentrate with high content of 6-zingiberol. According to the method, a pulsed electric field technology is adopted, under the catalytic action of organic acid, part of the 6-gingerol is rapidly converted into the 6-gingerol under the low-temperature condition, so that the gingerol with high content of the 6-gingerol is prepared, and the method is short in time, efficient, simple to operate and safe in production.
