Alpha acids (α acids) are a class of chemical compounds primarily of importance to the production of beer. They are found in the resin glands of the flowers of the hop plant and are the source of hop bitterness. Alpha acids may be isomerized to form iso-alpha acids by the application of heat in solution. Iso-alpha acids (iso-α-acids) are typically produced in beer from the addition of hops to the boiling wort. The degree of isomerization and the amount of bitter flavor produced by the addition of hops is highly dependent on the length of time the hops are boiled. Longer boil times will result in isomerization of more alpha acids and thus increased bitterness.

The invention relates to a method for synthesizing azelaic acid through single ionic liquid catalyzing oleic acid. The method comprises the following steps: oleic acid and a 1-(alpha-acid) methyl-3-methylimidazole phosphotungstic acid ionic liquid catalyst are mixed, then a hydrogen peroxide solution is added, the mixture is fully stirred, after the reaction, an oil layer is on the upper layer, a water lay is on the lower layer, and separation is easy; a separated aqueous phase is refrigerated and crystallized, white powder is precipitated, and azelaic acid solid is obtained through suction filtration and drying. According to the method, other chemical apparatuses are not required to be added in the whole reaction process, energy is saved, the reaction speed is accelerated, the time is saved, and no large number of organic solvent is required in the reaction, so that the method is green and environment-friendly. Method for simultaneously measuring alpha-acids, beta-acids and iso-alpha-acids in hops

The invention discloses a method for simultaneously measuring alpha-acids, beta-acids and iso-alpha-acids in hops by reverse-phase high-performance chromatography. By the aid of the method, nine substances including three types of the alpha-acids, three types of the beta-acids and three types of the iso-alpha-acids can be simultaneously separated quickly and effectively. The method is characterized in that chromatographic conditions include that a chromatographic column is an EC 250/4Nucleosoil 100-5C18 chromatographic column, a flowing phase A is aqueous solution [containing 0.1% of phosphoric acids and 0.2mM of EDTANa2 (ethylene diamine tetraacetic acid disodium)], and a flowing phase B is acetonitrile. The flowing speed is 1.0mL/min, dual-wavelength detection UV (ultraviolet) waves have wavelengths of 270nm and 315nm, the temperature of the column is 30 DEG C, and the volume of an injected sample is 10 microliters. The method is used for monitoring change relation among the alpha-acids, the beta-acids and the iso-alpha-acids in the hops in a production process for heterogenous particles and heterogenous extract of the hops, and provides a theoretical reference for production technology. In addition, the method also can be used for researching dynamic variation of the alpha-acids and the iso-alpha-acids of the hops in a wort boiling process. Besides, the method has the advantages of good stability and repeatability, simplicity in operation, accuracy and reliability.
