The invention relates to a quick-frozen 
bamboo shoot production method, comprising the following steps: (1) treatment of raw materials, namely, selecting fresh 
bamboo shoots and removing impurities; (2) sterilization, namely, carrying out routine sterilization on the treated 
bamboo shoots; (3) quick-freezing, namely, quick-freezing the 
bamboo shoots one by one with a quick-freezing 
machine, controlling the quick-
frozen temperature at -30 to -35 DEG C, and discharging the bamboo shoots when the center temperature of the bamboo shoots drops below -18 DEG C; (4) 
ozone water ice-plating, namely, the quick-frozen bamboo shoots are soaked in 
ozone ice water for 7-20 seconds at an 
oxidation reduction potential of 300mv-600mv, and then quickly taking out the bamboo shoots; and (5) packaging, namely, vacuum-packaging the 
ozone ice-plated bamboo shoots, wherein, the 
oxidation reduction potential of the ozone water is 500mv, and the bamboo shoots are soaked in the ozone water for 10 seconds. The application of the method greatly reduces the total number of 
bacteria of bamboo products, effectively maintains the freshness of the bamboo products, prolongs the 
shelf life and reduces the contents of toxic and harmful substances.
