The present invention discloses a
sulfur-free
pinellia ternata
processing method. According to the method, fresh
pinellia ternata is subjected to selection and grading, the fresh
pinellia ternata having the same grade is peeled, and the peeled
pinellia ternata is subjected to color protection treatment by using a special color protection agent, wherein the special color protection agent comprises any three, four or five materials selected from
ascorbic acid with a
mass percent concentration of 0.04-0.4%,
citric acid with a
mass percent concentration of 0.1-0.6%, L-
cysteine with a
mass percent concentration of 0.01-0.06%,
sodium chloride with a mass percent concentration of 0.1-0.6%, and
calcium chloride with a mass percent concentration of 0.1-0.4%; after the color protection treatment is completed, the obtained
pinellia ternata is conveyed into
drying equipment, and
drying is performed until the
water content in the
pinellia ternata is less than 15%, wherein high temperature
enzyme inactivation and
bacterial killing are performed before the
drying; and the dried pinellia ternata is cooled to a
room temperature, and the cooled pinellia ternata can be directly subjected to vacuum sealed packaging or can be stored at a safe temperature and a safe
humidity. According to the present invention, the method has characteristics of simple process and easy operation, the obtained pinellia ternata finished product has characteristics of white surface, good color and no
sulfur residue, and the chemical components and the medicinal value of the pinellia ternata are not affected, and the advantages of economy and
environmental protection are provided.
