Method for producing an instant beverage composition for a coffee-containing instant beverage, wherein the method comprises the following process steps: (a) Providing at least one coffee extract in the form of an aqueous fluid extract; (b) subsequent concentration of the coffee extract to obtain a thickened coffee extract; (c) subsequent cooling of the thickened coffee extract obtained in process step (b) to temperatures below 0 °C such that the cooled thickened coffee extract has a viscosity increased compared to the coffee extract obtained from process step (b); (d) subsequent and / or during process step (c) incorporation of particulate roasted coffee into the cooled thickened coffee extract by mixing in the roasted coffee to obtain a homogeneous distribution of the roasted coffee in the cooled thickened coffee extract; (e) subsequent complete solidification of the coffee extract obtained in process step (d) and equipped with roasted coffee by means of deep freezing; (f) subsequent comminution of the solidified coffee extract containing roasted coffee into individual particles by means of crushing, granulating and / or grinding; and (g) subsequent drying of the particles of the solidified coffee extract equipped with roasted coffee by means of freeze-drying or vacuum belt drying to preserve the instant beverage composition; wherein in process step (c) the procedure is carried out such that the cooled thickened coffee extract does not solidify due to the introduction of shear forces; wherein the cooling in process step (c) takes place with the formation of ice particles in the cooled thickened coffee extract, wherein the ice particles are dispersed in the cooled thickened coffee extract, wherein the ice particles have a mean particle diameter, determined as D50 value, in the range of 0.05 to 2.5 mm; wherein the ice particle content in the cooled concentrated coffee extract is at most 95% by weight, based on the cooled concentrated coffee extract; and wherein in process step (d) the particulate roasted coffee is evenly distributed in the liquid phase of the cooled thickened coffee extract.
