This invention belongs to the field of
bioactive peptide preparation, specifically relating to an
iron chelating peptide, its preparation method, and its application in the preparation of iron supplements. This study used
soybean protein as
raw material and screened four
iron chelating peptides—EDEPFNLRSR, EDEPFNLR, DDLELKKIR, and EEQPLEVR—through
enzymatic hydrolysis, purification, identification, and molecular docking techniques. Using a Caco-2 small intestinal epithelial
cell model, it was found that all of the above
iron chelating peptides significantly promoted
iron transport and absorption, and significantly promoted Fe2+ absorption. 2+ Retention in the Caco-2
cell monolayer. The novel iron chelating peptides screened from
soybean protein hydrolysates in this invention hold promise as a safe and effective
iron supplement.
