The invention relates to the technical field of
fermentation, and particularly discloses a two-way liquid
fermentation method for preparing a tea extract and application of the two-way liquid
fermentation method. According to the method, firstly, the tea leaves are subjected to
plasma pretreatment, the bright green color and nutritional ingredients of the
green tea are reserved, and the content of EGCG in the
tea leaf extract can be increased; furthermore, the dried tea leaves are subjected to gradient crushing and grading treatment, so that the initial
dissolution rate of EGCG and other core components in the
tea leaf extract is increased by 30% or above; in addition, the mixed material is subjected to synergistic fermentation by adopting a composite strain of
lactic acid bacteria and
saccharomycetes, the synergistic effect can deeply convert the components of the
tea leaf extract, the
tea leaf extract can be induced to generate more novel active substances, novel effects are exerted, and meanwhile, the extraction rate of EGCG is remarkably increased. By adopting the two-way
liquid state fermentation method, the content of EGCG in the
tea leaf extract can be increased, and the extraction rate and purity of EGCG are remarkably improved.
