anthocyanin microcapsules. The method comprises the following steps: weighing a certain amount of prepared rhododendron pulchrum
anthocyanin powder, and dissolving the rhododendron pulchrum anthocyanin
powder in a
buffer solution with a pH value of 1.5-3.5; adding
monoglyceride into the rhododendron pulchrum anthocyanin solution, carrying out stirring and dissolving in a constant-temperature water bath at the temperature of 40 DEG C to 60 DEG C, and carrying out homogenizing at a high speed to form a primary
emulsion; then, respectively putting Arabic gum and
whey protein isolate into a
buffer solution with the pH of 1.5-3.5 at the temperature of 40 DEG C to 60 DEG C, carrying out stirring and dissolving, and after two wall materials are completely dissolved, mixing the solution of the Arabic gum and the solution of the
whey protein isolate; and finally, adding the primary
emulsion, carrying out stirring, carrying out homogenizing at a high speed to form a compound

mass ratio of the wall materials
whey protein and the Arabic gum to the core material rhododendron pulchrum anthocyanin is 4: 1; and in a
spray drying process, the temperature of an air inlet is 165 DEG C, and the feeding flow rate is 500mL / h. According to the preparation method, the original color and physiological activity of the rhododendron pulchrum anthocyanin can be effectively protected, the stability of the anthocyanin is improved, and the storage time is prolonged.
