The invention discloses a production process of bamboo root mountain spring water. The production process particularly includes the steps of: 1) connecting a stainless steel pipe, which is full-sealed and has a smooth inner wall, to a container filled with bamboo root mountain spring source water, and filtering the water to remove iron and manganese ions through a manganese sand filter; 2) filtering the source water, which has been filtered through the manganese sand filter, through a multi-medium filter composed of quartz sand filtering, carbon filtering, refined filtering and fine filtering; 3) filtering the source water successively through a hollow ultra-filtering processing apparatus and an ultra-filtering water purifier; 4) disinfecting and sterilizing the source water with a disinfectant, and sterilizing and disinfecting the source water successively through an ultraviolet sterilizer and an ozone disinfection device; and 5) performing instant high-temperature sterilization. The production process can effectively disinfect and sterilize the mountain spring water and maintain the mouth feel of natural water as most as possible. The process is green and environment-friendly and is free of side products, can maintain the mouth feel of the mountain spring water as most as possible, protects original ecology of water, and remains minerals, metasilicic acid, and microelements such as Ca, Fe, Zn, Se, I, K, Na and the like in the spring water.
