The invention discloses a preparation method and application of a composite 
starter. The preparation method comprises the following steps of: step 1, establishing a culture medium; step 2, separating and identifying 
lactic acid bacteria; step 3, screening excellent strains; step 4, preparing a 
microbial agent; and step 5, preparing the composite 
starter. 
Weissella mesenteroides cooperates with 
lactobacillus plantarum and 
lactobacillus brevis to form the composite 
starter for fermenting leaf mustard, so that the 
flavor of a product is improved, and the composite starter has a better potential application value; by using the composite starter, the 
fermentation period of the leaf mustard can be shortened, the 
fermentation end point can be reached in advance, the harm of infectious microbes is reduced, the defects of the fermented leaf mustard in taste and 
flavor can be regulated and controlled, the use is convenient, and the 
flavor and health trend of food development are met; and the composite starter can be directly put into the production of the leaf mustard, so that the product quality is improved, the use is convenient, and the key problems of long 
fermentation period, poor product quality stability, poor flavor and the like in the 
processing and production of the leaf mustard are solved.
